Ingredients

  • 7 tablespoons unsalted butter softened
  • cup granulated sugar
  • cup packed brown sugar
  • 1 whole egg
  • teaspoon sea salt
  • 1⅓ cups all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon baking soda
  • 2.5 ounces dark chocolate chopped

Instructions

Cream the Butter and Sugars:

  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth, about 1-2 minutes.

Add the Egg:

  • Beat in the egg until the mixture is smooth and well combined.

Combine Dry Ingredients:

  • In a separate bowl, mix the flour, cocoa powder, sea salt, and baking soda.

Mix Everything Together:

  • Gradually add the dry ingredients to the wet mixture. Fold in the chopped dark chocolate.

Shape and Bake:

  • Form the dough into pucks weighing about 2.3 ounces each. Place them on a baking sheet. Bake at 350°F for 12-14 minutes. For an extra chocolatey touch, you can add more chocolate chunks on top after baking.

Notes

  • Use room temperature butter and eggs for easier mixing
  • Don't overmix the dough - it can make the cookies tough
  • For extra gooey cookies, underbake them slightly
  • Try using different types of chocolate chips for variety
  • Let the cookies cool on the baking sheet for a few minutes before moving them
  • Add a pinch of espresso powder to boost the chocolate flavor
