Homemade Sweet and Spicy Pickles with Jalapeños

These homemade sweet and spicy pickles are a delicious combination of crisp cucumbers, tangy vinegar, and spicy jalapeños. Perfect for a unique twist on traditional pickles!

Ingredients
  

  • 14 oz cucumbers any type
  • 1 medium onion
  • 1 ½ tablespoons coarse sea salt
  • 2-3 fresh jalapeño peppers no need to remove seeds
  • 1 tablespoon fresh grated ginger
  • 1 cup 250 ml white vinegar (or rice vinegar)
  • ¾ cup 165 g sugar

Instructions
 

  • Prepare the Vegetables: Wash and dry the cucumbers and jalapeño peppers. Trim the ends off. Slice cucumbers and peppers into ½-inch (1.25 cm) thick slices. No need to remove seeds from the peppers. Peel and thinly slice the onion.
  • Salt the Vegetables: In a large bowl, combine cucumbers, onion, and salt. Cover the bowl with plastic wrap and refrigerate for 4 hours. Drain excess liquid through a colander and transfer the cucumbers and onion to prepared jars.
  • Make the Brine: In a saucepan, combine vinegar, sugar, jalapeños, and ginger. Heat over medium heat, stirring until sugar dissolves. Simmer for another 2 minutes.
  • Fill the Jars: Carefully pour the hot brine over the cucumbers and onions in the jars. Seal with lids and let cool on the counter before refrigerating.

Notes

Note: Pickles can be enjoyed as soon as they are cool, but for the best flavor, let them sit for 24-48 hours. If you sterilize the jars, pickles will last longer and can be enjoyed anytime!
