Cuisine American
- 4-5 ripe peaches
- 1 cup freshly squeezed lemon juice about 4-5 lemons
- 1 cup sugar adjust to taste
- 6 cups water divided into 2 parts: 2 cups boiling water and 4 cups cold water
- Ice
- Mint leaves for garnish optional
Make the peach syrup:
Remove pits from peaches and cut them into small pieces. In a medium saucepan, combine chopped peaches, 1 cup of sugar, and 2 cups of boiling water. Bring the mixture to a boil over medium heat, then reduce heat and simmer for 10-15 minutes until peaches are soft and the syrup thickens.
Cool the peach mixture: Remove the peach syrup from heat and let it cool slightly to room temperature, about 30 minutes.
Blend the peaches: Blend the peach mixture until smooth. Strain the puree through a fine sieve to remove any peach skin pieces and obtain a smooth syrup.
Store the syrup: Store peach syrup in an airtight container in the fridge for up to 4-5 days or freeze for up to 1 month.
Mix the lemonade: In a large pitcher, pour the freshly squeezed lemon juice. Add the strained peach syrup. Pour in the remaining 4 cups of cold water and mix well.
Chill the lemonade: Chill the lemonade in the refrigerator for 1-2 hours.
Serve the lemonade: Before serving, add ice to the pitcher. Garnish glasses with mint leaves, if desired.
