Ingredients
  

  • 5 tablespoons unsalted butter 70g
  • 1 1/4 cups granulated sugar 250g
  • 2 large eggs 110g
  • 1 egg yolk from a large egg, about 1 tablespoon or 20g
  • 1 teaspoon vanilla extract 5g
  • 1/3 cup vegetable oil 75g
  • 2/3 cup cocoa powder 75g
  • 1/2 cup all-purpose flour 65g
  • 1 tablespoon cornstarch 8g
  • 1/4 teaspoon baking powder 1g
  • 1/3 teaspoon salt 2g
  • 3/4 cup dark chocolate chunks or chips 100g

Instructions
 

  • Preheat the Oven: Preheat your oven to 325°F (160°C).
  • Prepare the Butter and Sugar Mixture: Melt the butter and combine it with the sugar in a large bowl, stirring until mixed but not overbeaten.
  • Add Wet Ingredients: Stir in the eggs, egg yolk, vegetable oil, and vanilla extract until fully combined.
  • Mix in Cocoa Powder: Add the cocoa powder and stir until smooth and fully incorporated.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture until just combined.
  • Add Chocolate Chunks or Chips: Fold in the chocolate chunks or chips evenly.
  • Shape the Cookies: Line a baking sheet with parchment paper and drop spoonfuls of dough onto it, spacing about 2 inches apart.
