  • Add 1 tablespoon of amaranth to the hot skillet and cover with a lid.
  • Shake the skillet gently to distribute the amaranth evenly.
  • Once popping slows, transfer to a bowl and repeat with remaining amaranth.

Creating the Chocolate Mix:

  • Melt 1.8 ounces of chocolate in a microwave or double boiler.
  • Pour the melted chocolate into the bowl with the popped amaranth.
  • Mix the chocolate and amaranth until well combined.

Shaping and Setting:

  • Transfer the mixture to a silicone mold or spread on foil.
  • Press down firmly to shape.
  • Place in the freezer for 10-15 minutes until set.
  • Break or cut into portions and enjoy!
