Ingredients
  

  • 2 cups dry beans or 4-5 cups cooked/2 cans
  • 3-4 large carrots grated
  • 1 medium onion finely chopped
  • 2-3 tablespoons vegetable oil
  • 4-5 tablespoons tomato paste
  • 2 cups water or vegetable broth for extra flavor!
  • Salt and pepper to taste
  • Optional spices for extra zing: bay leaf paprika, garlic

Instructions
 

  • Prepare Beans: Soak dry beans overnight, then cook until soft. Or use canned beans for a TIME-SAVING option!
  • Sauté Veggies: Cook onion and carrots in oil until soft and fragrant.
  • Combine: Add beans to the veggie mix and stir well.
  • Add Flavor: Mix in tomato paste and cook briefly to enhance flavors.
  • Simmer: Add water or broth, seasonings, and let everything stew to perfection.
