Ingredients
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 1/2 cups fresh peaches, peeled and diced
Peach slices (about 1/2 peach) for topping
1/2 cup chopped nuts (optional)

Execution
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan (about 23×13 cm) or line it with parchment paper.
Mix the Dry Ingredients:
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Mix the Wet Ingredients:
In a separate bowl, whisk together the vegetable oil and eggs until well combined. Add the vanilla extract and milk, and mix well.
Combine the Mixtures:
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix. Carefully fold in the diced peaches and chopped nuts (if using).
Prepare for Baking:
Pour the batter into the prepared loaf pan. Arrange the peach slices on top, gently pressing them into the batter.
Bake:
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Remove the bread from the oven and let it cool in the pan on a wire rack for about 10 minutes. Carefully remove the bread from the pan and let it cool completely on the wire rack.

Additional tips
- Peeling Peaches: To easily peel peaches, blanch them in boiling water for 30 seconds, then transfer them to an ice bath. The skin should peel off easily.
- Extra Moisture: If your peaches are very juicy, lightly pat them with a paper towel before adding them to the batter to prevent excess moisture.
