
Ingredients
1 pound tomatoes
1 onion
1 bell pepper
1 head of garlic
A pinch of rosemary
2-3 tablespoons olive oil
2-3 sprigs of fresh basil
Salt and black pepper to taste

Execution
Prepare the Vegetables: Preheat your oven to 400°F (200°C). Clean the bell pepper and cut the onion into several pieces. Halve the tomatoes.
Roast the Vegetables: Place all the vegetables, including the whole head of garlic, on a baking sheet. Drizzle with olive oil and sprinkle with rosemary.
Bake Until Tender: Roast in the oven for 30-40 minutes, until the vegetables are tender and slightly charred.
Blend the Soup: Transfer the roasted vegetables to a pot. Squeeze the roasted garlic cloves out of their skins into the pot. Add the basil, salt, and black pepper.
Puree: Use an immersion blender to blend everything until smooth
Heat and Serve: Warm the soup over medium heat until it’s hot. Serve immediately and enjoy!
Additional tips
- Adjust the seasoning to your taste by adding more salt or pepper.
- Garnish with fresh basil leaves or a drizzle of olive oil before serving.
